Whether you are a vegetarian, trying to eat healthier, or just looking for something different, this lentil taco filling is great. Out of all the tacos I make, this is probably the family favorite. It’s easy to make and inexpensive. The recipe currently online from MK! on Allrecipes is not the recipe I’ve made for years. Maybe they improved it and you can try it if you want, but the recipe we have printed under the same name from Allrecipes is easier for me, so I’m sticking with it. The ingredients in the original are more easily doubled for a bigger batch and when you have 5 kids, you need a bigger batch. Just use a whole 16 ounce bag of lentils (2 cups) and double all the other ingredients. Things will change as the kids get older, but with our current configuration, we can split a double batch into thirds.
Here are the listed ingredients for a single batch of the original recipe. If you do want to double it and freeze some for later, as stated above, use the whole bag of lentils and double the rest. Mo tacos, mo tacos, mo tacos.
1 cup finely chopped onion
1 garlic clove, minced
1 teaspoon canola oil
1 cup dried lentils, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
2 1/2 cups broth
1 cup salsa
The new recipe just lists “taco seasoning”, so you can use the individual ingredients above or a pack of taco seasoning. The actual cooking instructions are the same in both recipes. Enjoy!
