I love chili. It’s one of my favorite meals. Fortunately for me, my whole family seems to enjoy eating chili too (especially my baby boy). My favorite recipe is for Instant Pot chili mac, but my lentil chili recipe is pretty darn tasty too. The original recipe came from Katie at Runs For Cookies. My version of her recipe is basically the same, but I tweaked the ingredients and decided to cook it in the Instant Pot (my favorite way to make dinner).
Instant Pot Lentil Chili
INGREDIENTS
1 pound of lentils
6 cups of vegetable broth
1 28oz can of diced tomatoes
1 6oz can of tomato paste
1 onion chopped
1 green pepper chopped
1 tablespoon chili powder
1 teaspoon garlic powder
2 teaspoon cumin
1/2 teaspoon thyme
1/2 teaspoon black pepper
2 tablespoon Sriracha sauce
DIRECTIONS
Combine all of the ingredients into the Instant Pot, and stir thoroughly. Place the lid on the Instant Pot and turn to the sealed position. Select the chili/bean setting (this button has a 30 minutes cook time). After the chili has finished cooking, allow the Instant Pot naturally release. Top with cheese and sour cream.
Although this is a hardy meal, I frequently serve it with a baked potato or the best dinner biscuits in the world. This is a delicious and healthy Instant Pot lentil chili recipe! I hope you enjoy it a much as my family does.
