This is a family favorite that is cheap and easy to make. I only made the ketchup the first time. It was good, but with all the other condiments we have in the refrigerator, it wasn’t worth the extra effort to me. You have to handle them with a little care, but these bean burgers can even hold together on the grill. They are great off the grill with a slice of red onion and a heap of guacamole.
One thing this recipe does not state, probably because it is obvious, is SALT and PEPPER. If you are someone that does not deviate from a recipe, please, please keep that in mind. These probably won’t be nearly as tasty. Aside from that, I always throw in some extra spices, depending on what I’m going for. Mexican bean burgers – throw in some cumin and chili pepper. Pizza bean burgers – oregano and basil (omit the corn if that’s to weird for you). You get the idea.
Me on the other hand, I usually view recipes as a suggestion. A general idea to guide you in the right direction. I don’t go overboard on this recipe because I don’t want to overload it with non-binding ingredients and have it crumble apart, but in most recipes I always modify it to my taste. i.e. It calls for 1/2 an onion – it’s getting a whole onion. A clove of garlic – A – clove – of – garlic? I’m not sure what that even means, but it’s getting a few cloves if the word garlic is mentioned.
Christy usually follows directions word for word. She’s a great cook, but that’s why she is the best baker I know. You can’t really decide you want to put more of this or that into a baked good…unless it’s chocolate.
Burger:
2 tablespoons olive oil
1 (15-ounce) can kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1/3 cup dry breadcrumbs
1/4 cup canned whole-kernel yellow corn, drained
1/4 cup prechopped onion 1 large egg
Directions
Step 1: To prepare burgers, heat oil in a large nonstick skillet over medium-high heat.
Step 2: Combine kidney beans and black beans in a large bowl; partially mash with a fork. Add breadcrumbs, corn, onion, and egg; stir until well blended. Form bean mixture into 4 (1/2-inch-thick) patties. Add patties to pan; cook 4 minutes on each side or until crisp and beginning to brown.
Step 3: To prepare ketchup, combine ketchup, honey, lime juice, chile powder, and cumin, stirring with a whisk.
Step 4: Spread 1 tablespoon ketchup on bottom half of each bun; top each serving with a patty, 1 lettuce leaf and 1 tomato slice (if desired), and top half of bun.
